Having been cooking since my grade school days, this recipe is I think the very first dish that I was able to master through all these years. But this one is not your usual Afritada. This is a "sweet version" which makes it a bit more of a "Filipino style" of cooking. Hope you will enjoy!
Ingredients:
1 kilo chicken, cut into pieces approximately 1.5 inch. You can also use pork if you want. 4 pieces potatoes, peeled and cut into 4 per piece 2 pcs carrots diced 1 red onion, diced 2-3 cloves garlic, minced 1 green bell pepper, cut into strips 1 red bell pepper, cut into strips 1 cup tomato sauce 2 tablespoons patis (fish sauce) 2 tablespoons soy sauce 3 tablespoons cooking oil 1 tablespoon sugar 3 cups chicken stock ground black pepper & bay leaves (quantity according to your taste)
Cooking Instruction:
1. In a cooking pot or wok, heat oil. 2. Sauté garlic until golden brown then add the onions. Sauté until translucent. 3. Add chicken or pork and stir fry until slightly brown. 4. Add potatoes and carrots continue to cook for 5 minutes. 5. Add black pepper and bayleaves. 6. Pour the soy and fish sauce then the stock. Bring to a boil then add the tomato sauce and allow to simmer for 5 minutes or until the potatoes and carrots are almost cooked. 7. Add the sugar and the green and red bell peppers. Stir and simmer for 2 minutes.8. Salt and pepper to taste.

Note: In the absence of tomato sauce, we can use banana ketchup. Just exclude the sugar and add 1 tablespoon vinegar after the ingredients have been cooked.
